Snow! Go Away!

Hi ladies and gents,

I am not sure about my other fellow Kentuckians but I could do without the rain and the snow! It started off raining! And then it ended up snowing! And it is still snowing but it isn't sticking! I am sure it is affecting the way people are driving today. Christmas is over and I could really do without snow.

Enough about that! I am gonna make some Chili tonight. I've been wanting some since Sunday when we went over to Tiffhanie's and Chris' house. He made some and I had one bowl and now I want to make my own! So I'll be making my Turkey Chili, you can find that link HERE. It will be really good!

I'll be going shopping to get the ingredients in a couple hours when my husband gets home. I am also going to be doing some shopping for some discounted holiday items at Walmart and then do some couponing at Walgreens. I got a good deal that expires today. I'll be sure to let you know. The coupon expires today for the Delica that I printed off of Smartsource a while back. Walgreens has a store coupon for 10 off. Which makes it a 10 Money Maker. Anyway, I'll be going to get that and hopefully they have it! I'll be sure to let you know what I end up getting. I am thinking about doing a video on it because it is such a great deal. We shall see.

Merry Christmas!

Hi Everyone! I am back from my break! I was going to post a blog a few days ago and never did! Sorry about that. I enjoyed the break away from Social Media but boy did I miss it! Crazy how much you miss something. I like the technology and the social networking!

So, Merry Christmas Everyone. It is just 12:08 AM... Wish I would have started this blog a few minutes earlier and then I would have been actually on Christmas. I hope everyone had a great one!

Celebrated My Birthday

The 3rd was my birthday! I had a good time. Got a book I wanted and a Visa gift card. Went to lunch and dinner!

Sorry that I haven't been updating lately. I will try to do so more often once this new year rolls around! I am going to not be updating until probably the 23rd or 24th of December. Stick with me though!

Oh and Tuesday the 6st is my husband and I's seventh anniversary. Wow. Time flies!

Black Friday and Cyber Monday Shopping!

So, I just wanted to post that I got some good deal at Wally World last night! I spend 73.79 and all of the items were items that were in the ad for the 10pm sale.
I got 2 pillows, a rug, ninja treat/drink maker (get to make smoothies again), wax warmer with 2 wax melts included, Bones Seasons 2 and 3, Princess Bride on Blu-Ray. The receipt shows that I saved $15 but it didn't show my savings for the other four items. All of these items are for at home use. Haha None are gifts. I had fun shopping.

Today, I bought 2 pairs of pants for my husband on Jcpenneys.com and am just having them shipped to the store. I'll go pick them up. I hope they fit him alright. I am so mad at myself though because I didn't go through MyPoints for that and I could have got 2 points for every dollar spent! *sad face*

Not sure what deals are out there for Cyber Monday yet but I know I need to get some Christmas shopping done! I am going to try to make it to Walgreens as well. I've got a whole list of stuff that ends up being free after Register Rewards and also some profit using coupons! Now that is pretty good!

Easy Weeknight Meal :)

This is really easy to put together, it just takes a little time to cook the pasta and then bake it. Mmmm.


Chicken & Spinach Pasta Bake

8 oz uncooked penne/rigatoni (I used the Barilla Wheat Penne Pasta)
1 T olive oil
1 c chopped onion
1 (10 oz) pack frozen spinach, thawed and drained
3 c cooked chicken breast (I used canned chicken breast)
1 (14 oz) can Italian-style diced tomatoes, drained
1 (8 oz) container Philadelphia chive & onion cream cheese
½ t salt, ½ t pepper
1½ c shredded mozzarella cheese

Prepare pasta according to pkg directions. Spread oil on bottom of 11x17 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl/pot, set aside.

Drain chopped spinach well, pressing between paper towels if you feel you need too. Stir in cooked pasta, spinach, chicken, salt, pepper, diced tomatoes and cream cheese into onion in bowl. Spoon mixture into 11x17 dish & sprinkle evenly with shredded mozzarella cheese. Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly. I only baked it 8 more minutes ;-) Enjoy.

Let me know if you like it. My husband thought it was good... He ate like 3 helpings!

11.23.11 - Today I am thankful for life.

Wow. Maybe it will be a goal to see how fast I can make 300 posts on my blog? LOL Just Kidding. But honestly I do want to blog more!

I made an entree for dinner today that I enjoyed and it was hubby approved! I'll post that tomorrow since I am going to bed now! :( I could probably stay up a couple more hours but I won't. It is almost 2 AM here in Kentucky!

Today's Test Is Tomorrow's Testimony!

Hi everyone. Sorry I haven't updated for about a week or so. I don't have a good excuse this time. Really, I have had blogger opened in a tab on my browser and just haven't updated. I haven't even updated my Thanksgiving thankfuls! But I have kept up with them on Facebook. So, if you would to check out me on there you can. My Facebook

Our car has been broke down for a week. Then, we thought we got it fixed this past Saturday. It ran Saturday and yesterday!! Hubby went out to start it and leave for work and it wouldn't work! So, I don't know... We think we know what it is. Saturday, we changed the fuel filter... But think the real culprit is the fuel pump. We will see. I hope we get it fixed soon!

I am just grateful to know that today's problems and tests are tomorrow's testimonies!

Bubble-Up Pizza

I wanted to post this recipe for you just in case you'd like to try it also... I made this last night and my husband loved it! I thought it was good too!

1 1/3 cup of sauce (I used Classico Traditional Sweet Basil)
1 can of Grand Buttermilk Biscuits not flaky.
Pepperoni (I used Turkey Pepperoni)
about 1 cup Mozzarella Cheese

Preheat oven to 350. Cut biscuits in quarters and place in bowl. Pour Sauce over and stir until completely covered. Add some pepperonis in as well if you would like and stir. Place in oven for 20 mins. Pull out of oven and add mozzarella cheese and more pepperonis both under and over cheese. Place back in for 10 minutes. Remove from oven let sit for a couple minutes before serving. Enjoy! I didn't make a salad but it probably would have gone good with a garden salad!

I didn't get around to posting yesterday's thanksgiving. 11-7-11 - I am thankful for my family! I'll come back later with today's! I've some laundry to do! I better get to doing that shortly.

All Blessed Up!

I had a great day today. God is so good. This morning, I had 8 in my Sunday School class. I taught about Adam and Eve. The Bible point today was "Say No To The Devil." It was a really nice class even if the kids were a little hyper! It is so good to have kids returning... There is this one little guy who has been coming that is just soaking it all up. I love that! :)

This afternoon, my husband had an invitation to preach in Crittenden. Bro. Darrell joined us on the trip. It was a good service. It was shorter than we are used too and funny thing is that they covered everything (opening remarks, prayer, testimony, song service, preaching, altar, dismissal). He said we were on the road longer than actually being in church... haha It was an honor being there to worship and fellowship with them.

We headed to Wendy's after service and ate with a couple and their two sons. That was nice. Then, Bro. Darrell, my hubby and I went to Walmart to kill some time. We went to church after that. Bro. Sam preached tonight out of Jonah. His title was "Stop Messing with the Mariners." What a great Word!

After service tonight, we went to Frish's first with Bro. & Sis. Hall and I got a slice of Apple Pie with ice cream and hubby got Oreo Cheesecake. We sat and talked with them for a bit and then left. Travis and I went to Applebees after that! LOL Yum! We were so hungry because we didn't eat that much at Wendy's and neither had Breakfast... So don't judge! haha

We are all blessed up! How about you today?

I've been thinking about those that have had some sort of influence on my life... the ministers, Pastors, and teachers. I am so thankful for them and glad that they listened and obeyed God when teaching and preaching the Word to me! So thankful for my Pastor and his wife. I've been under their ministry since 2003! There are many others that I could mention here because I've been in church practically most of my life... but time doesn't permit at the moment!

Cheddar Ranch Cheese Ball and a thankful note!

Again as promised, here is the recipe to my cheeseball. I make this all the time for church because they love it.

Cheddar Ranch Cheese Ball

1 8oz pkg cream cheese
1 cup shredded sharp cheese
1/2-1 pkg dry Ranch dressing (not dip) mix
1/2 cup chopped walnuts

Allow cream cheese to come to room temperature. Add sharp cheese, and Ranch mix.
Mix well to combine.
Use your hands to roll the mixture into a ball.
Put the chopped nuts in a small bowl. Roll the cheeseball in the nuts.
Cover with press n seal or plastic wrap and refrigerate for at least 4 hours. Serve with crackers!

Frank's RedHot Buffalo Chicken Dip

Here is the recipe of the Buffalo Chicken Dip as promised. I took this dish with some Pretzel Crisps to church last Sunday for our Pastor's 30th Pastoral Anniversary and everyone loved it! I thought it was great myself! P.S. I am not a fan of Blue Cheese but I couldn't taste that flavor at all in this dip!

SERVINGS: 4 cups dip

8 oz. pkg. cream cheese, softened
1/2 cup blue cheese dressing
1/2 cup FRANK'S® REDHOT® Original Pepper Sauce
1/2 cup crumbled blue cheese
2 cans (12.5 oz. each) White Premium Chunk Chicken Breast in Water, drained

HEAT oven to 350°F. Place cream cheese into deep baking dish. Stir until smooth.
MIX in salad dressing, Frank's RedHot Sauce and cheese. Stir in chicken.
BAKE 20 min. or until mixture is heated through; stir. Garnish as desired.

Organization! I need some in my life!

It is true. I really need it in my life! I have always made lists but lately I haven't been doing that great of a job getting the tasks done and crossing them off. I have found quite a few other bloggers that have made some printables to help me on this. I was thinking about make some of my own and letting people download them from me if they want. Check out The Peaceful Mom and Money Saving Mom if you need help in meal planning, household management, daily planning or even a password keeper! These two ladies have great ideas and helpful ways to get those tasks done that you need to get done.

So, what made me think that I need more organization? Doing the bills! I've got some bills due the beginning of the month, some the middle and some the end! I need help! lol Do you ever panic because you think you missed a payment and are late? I did that tonight. I wasn't late if you are wondering but whew what a panic! :) So, I am gonna try to find something I can use to make sure I've got a little organization for this matter!

I really like Money Saving Mom's personal daily docket, she has a place for the amount of water she drinks, exercise and bible reading! Very awesome.

Hand Cramps and Hot Head Burritos

Today, I went to my MIL's to help with Christmas gifts. What we did is trace some coloring sheets into a water-coloring book for the kids. I traced 24 pages. We took the page in the book and placed a carbon paper over top and then the coloring page. I traced elephants, camels, snakes, penguins, whales and several other animals. I did this crouched over this fold-up table that was not at a great height. After the 3rd page, my hand was cramping! Haha

I am sure that these kids are going to LOVE their gifts this year. They are getting a decorated box that has all kinds of stuff in it. Paints, crayons, glue sticks, erasers, etc. It will be just in time for their second half of school after the holidays.


Travis come home from work and picked me up. We headed over to Hot Head Burritos for dinner. We saved so much tonight. Here is what we did. We did two transactions. First let me say that they give you stickers for each burrito you purchase and after 10 stickers you get a free entree (This is called the "Free Stuff Card") and secondly I received a Free Burrito Card in the mail because I participated in their text message challenge. We also have an app on my iPhone that gives you a free drink with a purchase of a burrito. Knowing this, Travis went first and got 2 burrito bowls & drink. He used the free burrito card and iPhone app coupon. He got a sticker added to one of the cards that we had already that made if full with stickers and now able to turn in for a free entree. He ended up paying 6.67 total. So, I went next and got a chicken quesadilla and a drink using this Free Stuff Card. I ended up paying 1.69. It pays to do two separate transactions sometimes! Have I mentioned yet that we also got 3 cookies because it is Free Cookie Monday? Great deal tonight if you ask me. But you know to be honest, I was really wanting to go to Captain D's. I've been wanting some of their hand-breaded fish!! So my MIL and I are going on Wednesday which is All You Can Eat! Lord Help Me Not To Over Stuff or Be Gluttonous!

My Apartment Sure Smelled Good!

Turkey Chili

2 lbs. of Ground Turkey
Small Onion -chopped
3 cans of chili beans
2 cans of light red kidney beans
1 big can of crushed tomatoes
1 can of tomato paste
1 can of diced tomatoes
1 can of Hunt's Seasoned Diced Tomato Sauce For Chili or generic brand if you can find it
2 1/2 cans of water
salt, pepper, chili powder to taste

First brown the 2 lbs of ground turkey with the onion. Drain.
Add tomato paste... stir until not pasty and it is covering all the turkey.
Turn down stove to medium heat.
Season with salt and pepper. (I did not use chili powder because I didn't think it ended up needing it. You could add some if you like.)
Pour in all cans in any particular order.
Simmer on medium for about a half hour. Stirring occasionally.
Turn down to low once you notice the chili is hot and let it simmer to cook those beans to be soft. I let mine cook for about an hour and a half!! Make sure you stir and be sure to stir the bottom of the pot!


This is what we had earlier tonight. So Good. We topped our with some cheddar cheese and some crumbled saltines!

Celebrating 30 Years.

My Pastor & his wife are celebrating their 30th Pastoral Anniversary this weekend. Tomorrow service is at 7PM and Sunday at 11AM. We are expecting a great turn out! I've been under them since I moved to KY back in 2003. They are such wonderful people! Here is the postcard that I created and we mailed out over 100 of them.

You will see the 3 churches that they have pastored in and also a picture of when they started in Silver Grove and them today! :)

We are sure to have a good turn out! My husband has created a slide that will play before and after service. It has over 400 pictures in it. It will actually place on both days. We are going to be at the church at 4:30 tomorrow for everyone to practice their songs and to make sure the sound is good and that the Presentation goes as planned. We are recording the service as well! I am gonna try to get some pictures.

I am making Buffalo Chicken Dip and also a Cheddar Ranch Cheeseball for Sunday. I got to go to the store tomorrow before heading to the church! Excited about this weekend.

Oh another exciting thing that has already happened this week is that we went to a Memorial Service for a friend's uncle that passed. (It was held at the church and I ran the sound/PowerPoint) An invitation to repent and get baptized was given and 4 ppl in his family were baptized!! How awesome is that!

Who Am I? Welcome to "Like A Rox"

The reason for this particular post is that I am joining in the link-up with Courtney at Women Living Well. She is having a Blog Bash while she is at a Blogging Conference.

My name is Roxanna. I am married to a wonderful man of God. He has been ministering for years but has been licensed with the organization for 5 years. Currently, he is an associate minister but feels the call to Pastor one day! It is an interesting life being a preacher's wife! I am involved with several ministries at the church. I teach Pre-teens on Sunday Morning, teach Children's Church on Wednesday nights and I run PowerPoint on Sunday nights and special services. Honestly, wherever I can be of use at church that is where I'll be.

I hope you will stick around and follow me on "Like A Rox." The inspiration behind this blog is a mixture of everything! Sometimes I blog about daily life and sometimes it may be a recipe, what was taught in Bible Study, or talking about something frugal like couponing. You may just be surprised. Lately, I've been trying to update more. I am trying to get back to updating every day. That takes some time though. What is it with my blog name? When I was in high school I had a few guys serenade me with the song "Like A Rock" and called me The Rock so that is why I named it this. Just recently to be exact. It used to be Roxanna's Blog and "It's A Small Blog After All". It just wasn't me. So I am kinda liking my new name and the tag line I chose... "Strong As I Can Be" with the Lord's help. And it is true. I wouldn't be that strong without Him!

I've become a YouTube fanatic!

I've missed out on a lot of people's posts because I have been watching vlogs over at YouTube! Do you have a vlog? or a favorite vlogger? If so let me know cause I might want to tune in! So, I've been going back and reading some of the blogs of people I follow. There is only so much reading that I can do though! Whew.

So, I finished painting my Mother-in-law's kitchen today. It looks nice. She took some pictures but I don't have them. She doesn't put them online but takes her SD card to Walmart to print off pictures. If I can get my hands on a picture I'll post it. It is light blue and then there is some darker blue near the basement door entrance area. She is going with a Nautical theme! I may be giving her the lighthouse stuff that I have in my kitchen because I am sick of it... LOL Hopefully, she will want/need the stuff. What is your kitchen decorated in? I've got a couple ideas of what I want to do.

Well, nothing very exciting lately. I know. But at least I have posted a few days in a row! Brownie points for me??!! :)

Guess what I made tonight!?

A Semi-Homemade Chicken Pot Pie


Here is my recipe:

Pie crust - packaged Pillsbury or Walmart brand. I used Walmart brand.
2 cans of cream of chicken soup
2 cans of Veg-All, drained
A rotisserie chicken (I took all the breast meat and shredded it, this is all the meat that I used about 2 1/2 - 3 cups)
Salt, Pepper, Thyme to season

Mix soup, vegetables, chicken, seasonings together in bowl.

In 10" pie pan, place first rolled out crust and then pour in mixture.
Cover with the second crust. Crimp the edges, and make slits in the top crust.
Bake at 375 degrees F (190 degrees C) for 45 minutes, or until crust is golden brown.

*hint* to make the edge not appear to dark and burnt, wrap aluminum foil around the edge.

Ice Cream

I think it is an addiction! Good one to have don't get me wrong but if you a diabetic? LOL Maybe not a good idea to eat is so late! I always have a sweet tooth really late in the evening and I don't think a piece of fruit will cut it! What do you think? Do you like ice cream or are you a cake person?

BTW, I did get ice cream tonight. We went to Kroger and I got some of their brand Artisan Vanilla Bean. Pretty good... I also got some Hershey's Hot Fudge. Yum.

I hate it!

I really hate that I go MIA with no update at all. I am totally not faithful at blogging! I apologize, please forgive me!

Here is a random cute puppy for your enjoyment. Ha.

So, what I have I been up to since Dad's visit? Tiffhanie and Chris' wedding! A pulled back muscle and UPCI General Conference.

Tiffhanie and Chris's wedding was beautiful. The decorations were so simple that it just made it very classy and elegant I think! :) Here are a few pictures. I am so glad I was able to be apart of this and her programs I made turned out wonderful!

I just love the picture of their First Dance! It is awesome with all the bubbles surrounding them. :)

So, wondering about my back? I pulled a muscle and it messed with the sciatic nerve the night before the wedding!!! I went to put a piece of paper in my bag and when I bent down I pulled my back out. Oh yeah, the wedding and reception were fun. Heels, a fitted dress, spanx and a messed up back! Can you say ouchie!? Went to the Doctor on Monday or Tuesday following the wedding and was put on muscle relaxers which did the trick!

General Conference was great this year. I took in so much. God did incredible things in Louisville, KY. KY Mass Choir did awesome. I could have been a part of the choir but timing and practices just didn't work for me :( Oh well. LOL Next year conference is back in St. Louis, MO. I have pictures and videos but I haven't went through them yet... so I don't know if I'll post any or not.

Still trying to find work. Got a letter from IRS saying they aren't recalling people until 2012 season. So, I've been applying places. Praying someone will call.

I was sick all night last night. Nausea? I tossed and turned and barely got any sleep. Hopefully it will go away.
