My Apartment Sure Smelled Good!

Turkey Chili

2 lbs. of Ground Turkey
Small Onion -chopped
3 cans of chili beans
2 cans of light red kidney beans
1 big can of crushed tomatoes
1 can of tomato paste
1 can of diced tomatoes
1 can of Hunt's Seasoned Diced Tomato Sauce For Chili or generic brand if you can find it
2 1/2 cans of water
salt, pepper, chili powder to taste

First brown the 2 lbs of ground turkey with the onion. Drain.
Add tomato paste... stir until not pasty and it is covering all the turkey.
Turn down stove to medium heat.
Season with salt and pepper. (I did not use chili powder because I didn't think it ended up needing it. You could add some if you like.)
Pour in all cans in any particular order.
Simmer on medium for about a half hour. Stirring occasionally.
Turn down to low once you notice the chili is hot and let it simmer to cook those beans to be soft. I let mine cook for about an hour and a half!! Make sure you stir and be sure to stir the bottom of the pot!


This is what we had earlier tonight. So Good. We topped our with some cheddar cheese and some crumbled saltines!
I'll try to remember to post the recipes for the cheeseball and dip I mentioned in previous post! :)

Celebrating 30 Years.

My Pastor & his wife are celebrating their 30th Pastoral Anniversary this weekend. Tomorrow service is at 7PM and Sunday at 11AM. We are expecting a great turn out! I've been under them since I moved to KY back in 2003. They are such wonderful people! Here is the postcard that I created and we mailed out over 100 of them.

You will see the 3 churches that they have pastored in and also a picture of when they started in Silver Grove and them today! :)

We are sure to have a good turn out! My husband has created a slide that will play before and after service. It has over 400 pictures in it. It will actually place on both days. We are going to be at the church at 4:30 tomorrow for everyone to practice their songs and to make sure the sound is good and that the Presentation goes as planned. We are recording the service as well! I am gonna try to get some pictures.

I am making Buffalo Chicken Dip and also a Cheddar Ranch Cheeseball for Sunday. I got to go to the store tomorrow before heading to the church! Excited about this weekend.

Oh another exciting thing that has already happened this week is that we went to a Memorial Service for a friend's uncle that passed. (It was held at the church and I ran the sound/PowerPoint) An invitation to repent and get baptized was given and 4 ppl in his family were baptized!! How awesome is that!

Who Am I? Welcome to "Like A Rox"

The reason for this particular post is that I am joining in the link-up with Courtney at Women Living Well. She is having a Blog Bash while she is at a Blogging Conference.

My name is Roxanna. I am married to a wonderful man of God. He has been ministering for years but has been licensed with the organization for 5 years. Currently, he is an associate minister but feels the call to Pastor one day! It is an interesting life being a preacher's wife! I am involved with several ministries at the church. I teach Pre-teens on Sunday Morning, teach Children's Church on Wednesday nights and I run PowerPoint on Sunday nights and special services. Honestly, wherever I can be of use at church that is where I'll be.

I hope you will stick around and follow me on "Like A Rox." The inspiration behind this blog is a mixture of everything! Sometimes I blog about daily life and sometimes it may be a recipe, what was taught in Bible Study, or talking about something frugal like couponing. You may just be surprised. Lately, I've been trying to update more. I am trying to get back to updating every day. That takes some time though. What is it with my blog name? When I was in high school I had a few guys serenade me with the song "Like A Rock" and called me The Rock so that is why I named it this. Just recently to be exact. It used to be Roxanna's Blog and "It's A Small Blog After All". It just wasn't me. So I am kinda liking my new name and the tag line I chose... "Strong As I Can Be" with the Lord's help. And it is true. I wouldn't be that strong without Him!

I've become a YouTube fanatic!

I've missed out on a lot of people's posts because I have been watching vlogs over at YouTube! Do you have a vlog? or a favorite vlogger? If so let me know cause I might want to tune in! So, I've been going back and reading some of the blogs of people I follow. There is only so much reading that I can do though! Whew.

So, I finished painting my Mother-in-law's kitchen today. It looks nice. She took some pictures but I don't have them. She doesn't put them online but takes her SD card to Walmart to print off pictures. If I can get my hands on a picture I'll post it. It is light blue and then there is some darker blue near the basement door entrance area. She is going with a Nautical theme! I may be giving her the lighthouse stuff that I have in my kitchen because I am sick of it... LOL Hopefully, she will want/need the stuff. What is your kitchen decorated in? I've got a couple ideas of what I want to do.

Well, nothing very exciting lately. I know. But at least I have posted a few days in a row! Brownie points for me??!! :)

Guess what I made tonight!?

A Semi-Homemade Chicken Pot Pie


Here is my recipe:

Pie crust - packaged Pillsbury or Walmart brand. I used Walmart brand.
2 cans of cream of chicken soup
2 cans of Veg-All, drained
A rotisserie chicken (I took all the breast meat and shredded it, this is all the meat that I used about 2 1/2 - 3 cups)
Salt, Pepper, Thyme to season

Mix soup, vegetables, chicken, seasonings together in bowl.

In 10" pie pan, place first rolled out crust and then pour in mixture.
Cover with the second crust. Crimp the edges, and make slits in the top crust.
Bake at 375 degrees F (190 degrees C) for 45 minutes, or until crust is golden brown.

*hint* to make the edge not appear to dark and burnt, wrap aluminum foil around the edge.

Ice Cream

I think it is an addiction! Good one to have don't get me wrong but if you a diabetic? LOL Maybe not a good idea to eat is so late! I always have a sweet tooth really late in the evening and I don't think a piece of fruit will cut it! What do you think? Do you like ice cream or are you a cake person?

What is your favorite ice cream brand/flavor?

BTW, I did get ice cream tonight. We went to Kroger and I got some of their brand Artisan Vanilla Bean. Pretty good... I also got some Hershey's Hot Fudge. Yum.

I hate it!

I really hate that I go MIA with no update at all. I am totally not faithful at blogging! I apologize, please forgive me!

Here is a random cute puppy for your enjoyment. Ha.

So, what I have I been up to since Dad's visit? Tiffhanie and Chris' wedding! A pulled back muscle and UPCI General Conference.

Tiffhanie and Chris's wedding was beautiful. The decorations were so simple that it just made it very classy and elegant I think! :) Here are a few pictures. I am so glad I was able to be apart of this and her programs I made turned out wonderful!

I just love the picture of their First Dance! It is awesome with all the bubbles surrounding them. :)

So, wondering about my back? I pulled a muscle and it messed with the sciatic nerve the night before the wedding!!! I went to put a piece of paper in my bag and when I bent down I pulled my back out. Oh yeah, the wedding and reception were fun. Heels, a fitted dress, spanx and a messed up back! Can you say ouchie!? Went to the Doctor on Monday or Tuesday following the wedding and was put on muscle relaxers which did the trick!

General Conference was great this year. I took in so much. God did incredible things in Louisville, KY. KY Mass Choir did awesome. I could have been a part of the choir but timing and practices just didn't work for me :( Oh well. LOL Next year conference is back in St. Louis, MO. I have pictures and videos but I haven't went through them yet... so I don't know if I'll post any or not.

Still trying to find work. Got a letter from IRS saying they aren't recalling people until 2012 season. So, I've been applying places. Praying someone will call.

I was sick all night last night. Nausea? I tossed and turned and barely got any sleep. Hopefully it will go away.
